What You Should Know:
- The Launch: WellSpan Health has launched “Fresh Take Eatery,” an AI-powered robotic dining system located at WellSpan York Hospital. It provides 24/7, on-demand food service for patients, visitors, and hospital staff.
- The Technology: The system is powered by the Autonomous Robotic Kitchen (ARK) technology from RoboEatz, featuring advanced articulated robotic arms from ABB Robotics. It is the first deployment of this specific technology in a U.S. healthcare setting.
- The Footprint & Scale: Despite occupying only 400 square feet—a fraction of a traditional commercial kitchen—the system effectively doubles the hospital’s dining capacity during peak periods.
- The Capabilities: The unit features four simultaneous cooking modules, autonomous ingredient storage and retrieval for up to 80 fresh ingredients, precision portioning, and self-cleaning functionality.
The Tech Stack: RoboEatz and ABB Robotics
To build this infrastructure, WellSpan collaborated with RoboEatz and ABB Robotics. The Fresh Take Eatery marks the first nationwide deployment of RoboEatz’ Autonomous Robotic Kitchen (ARK) technology in a healthcare setting.
The engineering behind the ARK system is designed to handle the complexity of a commercial kitchen without the footprint. Operating in just 400 square feet, the system can store and manage up to 80 fresh ingredients. When an order is placed, an articulated robotic arm—developed by ABB Robotics—retrieves the ingredients, manages precision cooking across four simultaneous heating modules, and handles the final plating.
“Flexible, collaborative robotics can solve problems that traditional automation cannot, working in dynamic spaces like kitchens, alongside human co-workers and without the demands of complex programming,” noted Jose Manuel Collados, manager of Product Line Service Robotics at ABB Robotics.
The system also features automated self-cleaning functionality and maintains strict ingredient traceability and consistency for a clinical environment.
Reducing Food Waste
The business case for hospital automation extends far beyond clinical workflows. The York Hospital campus sees roughly 10,000 people every day. Expanding a traditional commercial kitchen to meet peak-hour demand would require a massive capital expenditure and valuable hospital real estate.
The deployment of the high-density robotic unit has effectively doubled Wellspan’s dining capacity during peak periods without breaking ground on a new wing. Another key benefit of the robotic unit is its ability to utilize precision portioning and demand-based preparation through its AI logic engine to actively reduces food waste—a major cost driver in institutional food service.
“As the WellSpan York Hospital campus continues to grow, the demand for food services has increased,” said Alyssa Moyer, vice president, WellSpan Health and president, WellSpan York Hospital. “Fresh Take Eatery will help meet these growing demands, providing another option for team members and visitors to find healthy, fresh meals.” The facility complements existing dining options and can produce hundreds of made-to-order fresh meal combinations, including pasta dishes, bowls and salads. Featuring four cooking modules that can prepare food simultaneously, Fresh Take Eatery utilizes the same local ingredients currently featured in WellSpan York Hospital’s cafeteria, with WellSpan dietitians involved in menu development to support healthy eating options. The system can store and manage up to 80 fresh ingredients, enabling hundreds of customized meal combinations while reducing food waste through precision portioning and demand-based preparation.
